Chicos Altos
petillant naturel — a.k.a. natural red bubbly wine
In March ’24 we visited Niloufar, a bad-ass winemaker in Sant Joan Samora, Catalunya.
One of our best friends, Joey from Far Out Drinks Co., was helping her at the cellar and vineyard, in preparation for the next season.
We decided to take a trip to Catalunya too and learn more about the amazing craft behind natural wine making while helping an extra hand. Amongst the chores, disgorging bottles of pét-nat was one of the most fun and gritty jobs we helped with.
Disgorging is removing yeast sediment by -shooting- it out of the naturally pressurised bottle. One of the wines we disgorged was this incredible Garnatxa Negra, produced by the so-called méthode ancestrale, giving it a natural vibrant effervescence.
After a long day of disgorging hundreds of bottles we ended up in a local bar for some well deserved cervezas and croquetas, when we noticed our tab was labeled Chicos Altos, tall boys.
No surprise if you know Joey and Rob, as they’re both around 2m tall and they stood out like giants amongst the local crowd.
